How to Make an Iced Crème Brûlée Latte with Brûléed Cold Foam

Step 1: Brew the Espresso
Pull 2 shots of espresso or brew a very strong ½ cup of coffee. Let it cool slightly while you prep the rest.
Tip: If you don’t have an espresso machine, instant espresso or strong cold brew works too.

Step 2: Mix the Sweet Vanilla Base
In a glass (a 12–16 oz glass works well), add:
- 2 tablespoons caramel syrup
- ½ teaspoon vanilla extract, or vanilla bean
- milk
Stir to mix the flavors. This is your base, mimicking the custardy sweetness of real crème brûlée.

Step 3: Add Ice and Milk
Fill the glass with ice. Pour in ¾ cup cold milk, mixed with the syrup. Stir gently to combine.
You’ll now have a smooth, lightly sweetened iced latte base with deep caramel and vanilla notes.

Step 4: Make the Cold Foam
In a separate jar, frother, or French press, combine:
- ¼ cup cold milk
- 2 Tbsp cream
- ½ teaspoon vanilla extract, or vanilla bean
- 1–2 teaspoons caramel simple syrup or maple syrup (adjust to taste)
Froth until thick and foamy. If using a handheld frother, this takes about 30 seconds. You’re aiming for a pourable foam that will float on top of the drink.

Step 5: Add the Foam
Spoon the cold foam gently over the top of the iced latte. Let it settle into a smooth, even layer. It should float like a cloud above the drink.


Step 6: Sprinkle and Torch
Sprinkle 1 to 2 teaspoons of granulated sugar over the surface of the foam.
Use a kitchen torch to carefully caramelize the sugar. Move the flame in small circles until the sugar melts. I like to do the first coat just until the sugar melts, and then sprinkle on another layer.
This will be structured better, and not just sink into the cold foam. Torch the second layer until it turns golden brown, just like on a real crème brûlée.

Combine 1 cup cane sugar and ½ cup water in a saucepan. Bring to a boil, then simmer without stirring until golden brown. Carefully add another ½ cup water and stir gently. Add a split vanilla bean and let steep for 15–20 minutes before removing. Typically, I will let it steep for 1-2 hours, or even longer!

Dairy-Free Version
Use oat milk or almond milk for both the latte and the foam. Oat milk foams the best without dairy.
Salted Caramel Twist
Add a pinch of flaky sea salt to the foam before torching for a more elevated twist on caramel brûlée.

Hot Version
